Vertical Rotisserie
The other common style of rotisserie is the vertical rotisserie in which the heat is applied directly from the side or, less-commonly, convected up from below. In this style of rotisserie, balance of the load is less important than with a horizontal rotisserie.
Some dishes that are commonly cooked on a vertical rotisserie include:
- Döner kebab from Turkey
- Gyro, from Greece
- Shawarma, from the Middle East and the Arab World
- Taco al pastor, from Mexico

Famous quotes containing the word vertical:
“I tell you, hopeless grief is passionless;
That only men incredulous of despair,
Half-taught in anguish, through the midnight air
Beat upward to Gods throne in loud access
Of shrieking and reproach. Full desertness,
In souls as countries, lieth silent-bare
Under the blanching, vertical eye-glare
Of the absolute Heavens.”
—Elizabeth Barrett Browning (18061861)
